Charred radicchio


 

Wow .. your friends at the next bbq … 


Quarter large radicchio or half if smaller. 


Rub all over with olive oil and sprinkle with salt. 


Heat bbq, frying pan, or grill to hot.


Place on the heat … cut side down … 


Grill for 2-3 minutes to char.


Turn to other cut or outside (if cut in half).


You want a mixture of lightly charred leaf and slightly wilted interior. 


Remove from heat splash a small amount of red wine or balsamic vinegar over the radicchio.
