Wow your friends at the next bbq …
Quarter a large radicchio, or half if radicchio is smaller.
Rub all over with olive oil and sprinkle with salt.
Heat BBQ, frying pan, or grill to hot.
Place on the heat, cut side down.
Grill for 2-3 minutes to char.
Turn to other cut or outside (if cut in half).
You want a mixture of lightly charred leaf and slightly wilted interior.
Remove from the heat, and splash a small amount of red wine or balsamic vinegar over the radicchio.
