Radish & Cucumber Salad

This tangy, crunchy Radish & Cucumber salad makes a beautiful, refreshing side dish or is equally as good on it's own for a light lunch! This recipe is also easily doubled if you are preparing food for more people.

You will need:

1 bunch of radishes

2-3 cucumbers

Small handful of fresh coriander (or substitute mint)

Half a cup of thick natural yoghurt

Good squeeze of fresh lemon juice

1 tsp honey

Freshly ground sea salt & black pepper to taste

What to do:

Thinly slice your radishes and cucumbers using a mandolin or sharp kitchen knife, and finely chop your herbs.

Combine the rest of the ingredients in your serving bowl, then stir through the radishes, cucumbers and herbs and enjoy!
