Zucchini Pizza Bases

These delicious, vege packed pizza bases are a great alternative to traditional doughy store bought pizza bases and the perfect way to make pizza a healthier option, that tastes amazing and appeals to the kids!

You will need:

3 cups grated zucchini 

1/2 cup grated cheese (I used a combination of parmesan and mozzarella)

3 free range eggs

1/3 cup flour (substitute your fave gluten free flour for a gluten free option)

Small handful of fresh basil leaves (or 1 tsp dried basil flakes)

1/2 a fresh chilli (or 1 tsp chilli flakes) - just leave this out if you don't appreciate a wee bit of spice

Freshly ground sea salt & black pepper

What to do:

Coarsely grate your zucchini and place in a bowl, sprinkling a small amount of freshy ground salt in between every layer you add (this helps to release the water from your zucchini). Let the grated zucchini sit for at least 15-20 minutes, then squeeze out the excess water. You can do this by placing the grated zucchini into a clean tea towel and squeezing, or press it into a sieve. You can also pat dry at the end with a paper towel if you want to be extra.

Preheat your oven to 180°C and finely chop your fresh basil leaves and chilli. Throw your eggs into the same bowl you salted the zucchini in (cos who needs extra dishes), give them a good whisk, then add your basil and chilli, grated cheese and zucchini and then finally your flour and pepper. I wouldn't recommend adding any extra salt as the salt you used already should be enough. Stir until just combined.

Place your mix onto a very well oiled or lined pizza pan (if you don't have one of these you can substitute a cake tin) or just make whatever shape you like on a lined baking tray if circle pizzas aren't your thing. Smooth the mixture out evenly, then bake for approx. 20minutes, or until golden brown and dry to touch.

Remove your pizza base from the oven, stand for 10minutes, then add pizza sauce and your choice of pizza toppings and bang the whole lot back in the oven for another 20minutes (give or take). Enjoy your delicious homemade pizza hot from the oven! This pizza pairs beautifully with a fresh green salad.
