These beetroot balls so good you won't be missing meat at all (but you can add it in if you like! - just add mince to this recipe).
Grate three small beetroot & then combine in a bowl. You can use a food processor instead of grating.
Add the following diced to the beetroot: one leek or onion, any leafy greens (I used the tops of the beetroot, but you could use spinach, kale, radicchio, silverbeet, watercress etc) and any other veggies you would like to add. I included grated carrot, garlic and herbs - use what we you have!
Add 8 tablespoons of olive oil.
Add salt and pepper to taste.
Then bake in the oven, on a tray with baking paper and olive oil for 20 minutes (10 minutes each side) at 200°c. Makes 10 - 12 balls.
Serve with spaghetti and any garnishes you would like. We topped ours with fresh watercress 🌿
