Coriander Mexi Bowl

Coriander Mexi Bowl
{plant based and gluten free}
• Rice (as per serving instructions on packet)
• 1 onion
• 4 tablespoons of olive oil
• 2 tablespoons of garlic
• 5 medium mushrooms
• 1 packet of Mexican spice mix
• 1 can of tomatoes
• 1 can of black beans
• 1 can of mixed beans
• 1 can of baked beans or refried beans
• Coriander
• Lime juice
• Salt and pepper to taste
First get your rice on as per packets serving instructions. 
In a large pan add the olive oil and garlic. 
Dice up the onion and start lightly frying, then add the sliced mushrooms and your Mexican spices.
 Add the can of tomatoes and beans and let cook on a medium heat, stirring occasionally.
Once the rice is ready, serve with salad and guacamole. With your coriander on top.
Delicious with a drizzle of lime juice! Enjoy!
