This recipe is delicious and will leave you feeling refreshed!
In a big bowl add your sliced up Kale and greens. Chop up a small bunch of coriander then add the olive oil, juice from one lime (or lemon) and massage with your hands.
Lightly toast the sunflower seeds and add them to the bowl. Peel and chop up 4 mandarins into the bowl (this punch of sweetness will act like a dressing.) Slice up one avocado and add to the salad with salt and pepper to taste. Enjoy!
• Chop up a large bunch of kale and greens (spinach, lettuce or chard)
• Drizzle with olive oil (8 tablespoons)
• Small bunch of coriander
• Add 1 lime/lemon juice
• 4 mandarins
• 1/2 cup of sunflower seeds
