Honey Roasted Swede

These delicious sweet and spicy swede roasties are sure to delight!

Ingredients:

1 large (or 2 smaller) organic swede

Small bunch of finely chopped coriander

Freshly ground salt 

2 TBS olive oil

2 TBS honey

1 tsp cumin seeds

1 tsp chilli flakes

Method:

Preheat oven to 200°C.

Peel the swede and cut into cubes, place into a shallow roasting dish.

Add olive oil to the roasting dish and toss through the swede cubes, until they are well coated in the oil.

Arrange the swede cubes in a single layer and place into the oven. Roast for 35-40mins, flipping occasionally, until the swede is golden and soft.

Take the dish out of the oven, and stir through the cumin seeds, chilli flakes and honey, before returning the dish to the oven for a further 10mins or so.

Remove the dish from the oven and stir through the finely chopped coriander and salt. Serve immediately.
