Gluten free and vegan friendly.
In a bowl add the sliced Radicchio, grated carrot, capsicum, apple, celery (could use cucumber) and fennel. In a smaller bowl add the ingredients for the dressing, whisk it together then add to the slaw.
Can be enjoyed with grilled tofu or chicken, cauliflower wings or put into a burger. Super delish!
For the slaw I used:
1 carrot grated
1/2 capsicum - diced
1 green apple - diced
2 sticks of celery -diced
1/4 of a fennel bulb - finely diced
For the dressing:
3 tablespoons of tahini
3 tablespoons of soy sauce or tamari
1 tablespoon of garlic
3 tablespoons of olive oil
1 lemon's juice and rind
4 tablespoons of warm water helps to whisk, to combine all the ingredients.
