Spinach and ricotta quiche

Ingredients

  • 1 brown onion chopped
  • 3 garlic cloves diced
  • 1 tbs olive oil
  • 4 eggs
  • 250g frozen spinach defrosted squeezed
  • 250g ricotta
  • 1/2 cup cream (can use coconut cream)
  • 1/2 cup milk (can use non-dairy)
  • 1 pinch salt and pepper
  • 2 sheets puff pastry
  1. Preheat oven to 180C.
  2. In a frying pan, heat the oil. Add the onion and garlic and fry, stirring, until opaque.
  3. In a mixing bowl, beat the eggs, add the spinach, ricotta, cream, milk, salt and pepper, onion and garlic, and mix thoroughly.
  4. Lay the puff pastry in a greased pie tin, fill with the egg mixture and bake for 35 minutes.
