Swede has a sweet, earthy taste and is an excellent source of many vitamins and nutrients - these yummy swede chips bring big flavour alongside a wide range of health benefits.
You will need:
1 large (or 2 smaller) organic swede
50gm grated parmesan (or vegan alternative)
Finely chopped fresh parsley (for garnish)
Freshly ground salt & pepper
1-2 fresh garlic cloves
1 sprig of rosemary
Olive oil
What to do:
Preheat your oven to 220°C.
Peel the swede and cut it into chips, then place into a shallow roasting dish lined with baking paper.
Cut the garlic and rosemary finely, and add these to the roasting dish, along with 2 tablespoons of olive oil and freshly ground black pepper. Get in there with your clean hands and toss the swede chips, ensuring they are well coated with the olive oil.
Spread the swede chips out into a single layer in your roasting dish, and put in the oven for 15mins. After this time, remove the roasting dish and flip the swede chips. Sprinkle the top of the chips with half of the grated cheese, and return to the oven for 10mins.
Remove the roasting dish and flip the swede chips again, sprinkling the rest of the grated cheese over the top of the flipped chips. Return to the oven for a final 10mins.
Take your roasting dish out of the oven, and carefully transfer the swede chips into a bowl. Toss through the chopped parsley and freshly ground salt, and serve.
Variation: Add bacon pieces and sour cream for an indulgent "loaded" version of these swede chips.
