• Packet of rice paper rolls
• Tofu or chicken
• 1 Carrot sliced
• 1 lemon juice
• 4 tablespoons Soy sauce
• 2 tablespoons of sesame oil
• 4 tablespoons of olive oil
• 2 tablespoons of sweet thai chili sauce
• 2 cloves Garlic
•1 small bunch of parsley and mint and watercress
• Salt and pepper to taste
Slice up your chicken or tofu and bake in the oven (20 minutes at 200°c, till crispy). Slicing the tofu in strips is easier to fit into the rolls, put onto a baking tray with a little olive oil, chopped up garlic, soy sauce and salt and pepper. Can add spice if you like (siracha, chili etc.)
Slice the wombok into thin ribbons into a large bowl and add the olive + sesame oil, lemon juice, soy sauce, sweet thai chili sauce, chopped up mint, parsley and watercress.
Then combine with a little salt and pepper to taste. Slice the carrot into thin ribbons and follow the instructions for the rice paper rolls (dip into water), wrap up, with a little bit of everything and enjoy!
