Need ideas to use up your Summer abundance of Zucchini? Why not whip up this Zucchini Hummus, it's super easy to make and tastes amazing too!
You will need:
2-3 zucchini (approx. 400g)
3 tablespoons Ceres Organic Tahini
3 tablespoons Greek style yoghurt
Freshly chopped herbs (optional)
Freshly ground sea salt and pepper
Juice of one large organic lemon
Ceres Organic Olive Oil
What to do:
Preheat your oven to 200°C.
Top and tail your zucchini and cut them into small chunks. Put them in a bowl, along with a decent splash of Olive oil and a teaspoon each of freshly ground sea salt and pepper. Combine, ensuring that the zucchini pieces are well coated in oil.
Place the zucchini pieces onto an oven tray and pop them in the oven for about 15-20minutes, or until just soft and starting to turn golden brown.
Remove the zucchini pieces from the oven and place them into a food processor, along with the tahini, yoghurt, lemon juice and a small amount of freshly chopped herbs.
Pulse gently until combined, don't over process this mixture, you want it to still be a wee bit chunky.
Serve warm on the side of your dinner plate as the perfect low carb alternative to mashed potato, or chill and serve as a delicious dip or spread.
Will keep well in the refrigerator for up to a week.
